Honey from Yucatán is renown worldwide for its high quality. The tajonal and ts’its’ilche’ flowers are primary sources of pollen for the bees. The Centro de Investigación Científica de Yucatán (CICY) attributes the high quality of the region’s honey, in part, to its extensive biodiversity and considers all honey to be of the multifloral variety, even with higher concentrations of certain varieties. Honey production in Yucatán occurs in three phases, according to the CICY.

We bottle our honey in the town of Umán. The process is managed by members from Cab-Balam SCP. At this plant, we can process up to 20 tons of honey _how often. The plant is certified by ____ which assures that our honey meets the highest safety and quality standards.
